General description | Dextran is a high molecular glucose polymer produced from sucrose fermented by Leuconostoc mesenterica, is composed of α (1 → 6) glycosidic bond linked linear glucose unit skeleton and α (1 → 3) It is composed of branched chains that are connected by glycosidic bonds at the beginning, of which the branched glycosidic bonds account for about 5% . The length of side chain is mostly 1-2 glucose units. Its molecular weight varies from 1kDa to 2000kDa, which is reflected by the average molecular weight Mw and molecular weight distribution MWD. The degree of side chaining of dextran with different molecular weights is different.
